Anthologies
I had my students make anthologies of poems they liked.
I noticed students trying to copy poems they like (not imitate the style, but literally recopy so they could have the poem.) I decided to require each one to make a notebook of ten poems they liked.
They could select any poems they liked, and I had them either recopy on unlined paper (put a dark-lined paper behind to stay straight) or word process them. They had to have a table of contents, bibliography, and justification for each poem they included.
You could increase the sophistication of the project by requiring a theme for all poems--love poems, nature, problems, or whatever. Also, you could require them to discuss poetic devices in the justification. You could have one or two students share poems they have found each day--there are lots of possibilities. Some of my students decorated their poems.
